Easy Peasy Berry Delight Desert

I’m no chef. I’d like to think of myself as a person that has learnt over time to appreciate cooking. I used to burn vegetables and meals all the time!

One night I was craving desert. I couldn’t be bothered getting back in the car after just getting home from a full day out, so my mind went straight to scavenging what I had as in supplies in the cupboards.

If you are time poor like me but after a quick desert fix that looks pretty special, this is for you!

EASY PEASY BERRY DELIGHT DESERT

{Serves 4}

 

What you need: 

  • 1 square of frozen puff pastry
  • Handful of frozen or fresh berries for each puff square
  • Honey { to drizzle over }
  • Icing sugar
  • Cream or Ice-cream on the side

 

Method

 

  1. Pre-heat over to 180 degrees
  2. Pull out one sheet of puff pastry from the freezer and place on your kitchen bench to thaw out for a few minutes. When it is soft, cut the large square into 4 smaller squares.
  3. Line baking tray with baking paper
  4. Place 4 square of pastry onto the tray and pierce each square with a fork a few times
  5. Place a handful of berries in the middle of each square
  6. POP INTO OVER
  7. After approx 5 mins open your oven and pull our the tray to drizzle a little honey over the berries
  8. Pop tray back in for another 5 mins or until you can see the pastry puffing and going golden brown
  9. When ready – pull out tray and dust some icing sugar over each delight
  10. Serve with a dollop of ice-cream or cream
  11. Enjoy!

I had a hysterectomy at 37 years of age

 This coming Wednesday will mark four weeks since my hysterectomy. It has been a long journey coming – this hysterectomy and with all the ailments that I had experienced over the last 20 years, including low grade cervical cancer, I could not have been happier seeing my uterus ripped out and put in the bin. That said, I am grateful that these organs allowed me to birth my two sons. They are the joys and absolute headaches of my life.
